The name of ”amarantos" is Greek for "imaginary flower that never withers", aims to take the one-Michelin-star French chef Miyazaki to even greater heights, is filled with plant-themed designs. The flowers that will shine forever are expressed with plates from the Mille Nuits collection by Baccarat. Within the minimalist design, the crystal cuttings shine with the lighting and continue to add color to chef's cuisine.

As it is designed solely for guests to enjoy chef's cuisine, the cooking process and his skilled techniques are visible to all guests seated at the counter.

To this end, we have created an open kitchen that exposes most of the cooking area.

We paid meticulous attention to the kitchen's layout, ensuring there is sufficient storage space aligned with operational needs and designing equipment that makes the kitchen functional and visually appealing.

As a result, the island counter serves as the chef's stage, is located in the center of the space, creating a symmetrical and symbolic layout.

Additionally, we received feedback from the chefs and staff that the kitchen is very easy to work in and stress-free.
